Red peppers will always have more flavour from early summer until the autumn. Romano peppers have been a revelation to us, because they have an additional intensity of sweetness, as well as a pleasingly thin flesh that is similar to the Spanish piquillo pepper. Good-quality tinned piquillo peppers can also be used in this recipe. We love this dish, not only because it looks fabulous but also because the flavours of the sweet peppers, preserved lemon and capers go brilliantly together.
