Cucumber Chips and Dill Yoghurt

The sliced cucumber is coated in a simple cornflour batter. Both the batter and the cucumber have a wonderful crunch, though of a different nature. Combined with the cool yoghurt, this makes an excellent mezze.

Ingredients

  • 2 medium cucumbers
  • 4 tablespoons chopped dill, plus extra sprigs to garnish
  • 1 garlic clove

Method

Place all the dry ingredients for the batter in a bowl. Make a well in the centre and slowly pour in the water, smoothing out any lumps with your fingertips. Keep on adding water until the batter is the consistency of single cream. Cover the bowl and chill in the fridge for at least 20 minutes.
