Sometimes we taste a carrot and we want to weep. There are certain times of the year when a carrot has a perfume, an intensity, sweetness and complexity, that is quite incredible. For us, it is very annoying that carrots can’t always taste like that, yet we think buying organic does help the flavour a great deal.

Ingredients

  • 500 g organic carrots, peeled
  • 4 tablespoons extra virgin olive oil
  • 2

Method

Preheat the oven to 200°C/400°F/Gas 6. Chop the carrots into quarters lengthways and then into small cubes. Scatter them over a baking tray then add 2 tablespoons of the olive oil, half the caraway and some seasoning. Toss well.
