Another great sharing dish.
For the stock, place the leek, carrots, onion, bay leaves, fennel seeds, peppercorns and thyme in a large saucepan, just cover with water and simmer for 15 minutes. Add the crustacean shells and simmer for another 15 minutes. Remove from the heat, strain the liquid and discard the solids.
