This cake is delicious with a small glass of sweet or medium Oloroso or Pedro Ximénez sherry.

Method

Preheat the oven to 180°C/350°F/Gas 4. Line a 20–25cm round cake tin with baking parchment.

Whisk the butter in an electric mixer fitted with a balloon whisk for 10 minutes, until pale and fluffy. Add the sugar and continue to whisk for 15 minutes, until even paler and fluffier
