Method

Put 500g caster sugar in a heavy-based saucepan and just cover with water. Place over a medium-low heat to allow the sugar to dissolve in the water. Once clear, bring to a gentle simmer, then boil until reduced, thick and syrupy. Pour into a sterilised bottle.
