Any gin can be used for this, as most of the flavour comes from the oranges.

Ingredients

  • 1 litre gin
  • zest of 5 Seville oranges (available in early January), or other thick-skinned oranges like

Method

Empty a small amount of gin from the bottle to make room for the zest and then put all the zest into the bottle. Using the small amount of gin taken from the bottle, make yourself a gin and tonic to reward yourself for your hard work.

Leave the Seville gin for at least one month to infuse. Strain through a muslin cloth and re-bottle.
