Ceplok telur is an egg fried sunny-side up. This way of cooking an egg is also called “telor mata sapi” or “eye of the cow egg.” A plate of rice topped off with ceplok telur, drizzled with kecap manis, and showered with fried shallots makes the perfect lazy meal. You can, of course, make the yolk as runny or as firm as you’d like!

Ingredients

  • 1 tablespoon vegetable oil
  • 1 large egg
  • Steamed rice for serving
  • Kecap manis

Method

Heat the oil in a small cast-iron or nonstick skillet over medium-high heat until shimmering hot. Carefully break the egg close to the surface of the oil to prevent hot oil from splashing.

Tilt the skillet toward you so oil pools against the side of the pan. Baste the egg with the hot oil, aiming at the uncooked portions of the egg white and avoiding the yolk. Continue basting until the
