Tofu Omelet

This dish wasn’t always in Julia’s repertoire. When we lived in Singapore, we used to dine at an Indonesian restaurant called Sanur. We didn’t eat there often but when we did, we always ordered tahu telur, a crispy nest of tofu and eggs fried together into an elevated omelet and drizzled with a heady sweet and spicy sauce.
