Method

Combine the sugar, water, and pandan leaves in a small saucepan and bring to a boil over medium-high heat. Reduce the heat to low and stir continuously until the sugar dissolves, 8–10 minutes.

Let the syrup cool completely. Remove and discard the pandan leaves and pour the syrup into a jar or bottle. Refrigerate for up to 2 months. Makes 1½ cups (350 ml).
