  • 3 large egg yolks
  • cup (140 g) sugar

Method

Whisk the egg yolks and sugar in a medium saucepan. Gradually add the milk, whisking constantly, until frothy. Then add the cornstarch a little at a time, followed by the vanilla.

Set the saucepan over medium-high heat, whisking often until the custard starts to thicken, 7–8 minutes. Once it thickens and begins to bubble, continue whisking for 1 minute longer. Reduce the heat to medium
