This simple sambal is very versatile. It can accompany Sate Ayam or be used as a dipping sauce for fried fish or tofu. The sambal may seem overcrowded with shallots and chilies, but that’s how it’s meant to be.

Ingredients

  • 8 red and/or green bird’s eye chilies or Thai chilies, chopped
  • 2 Asian shallots or 1

Method

Mix the chiles, shallots, garlic, kecap manis, and lime juice together in a small bowl. Taste and add more kecap manis or lime juice if desired.
