Nasi uduk refers to a rice dish cooked in coconut milk and spices that is popular in Betawi (Jakarta) cuisine. Some posit that “uduk” is related to the word “aduk,” which means “to mix,” and hence the other meaning for “nasi uduk”—a complete meal of coconut rice and several sides. I usually use Thai jasmine rice but any long-grain rice, like basmati or Carolina Gold rice, will work.
