A pot of chicken stock becomes fragrant and exotic with the addition of classic Szechuan flavourings—ginger, chilli and roasted sesame oil. The crispy crescents make wonderful appetisers in their own right.

Method

To make the filling, heat the oil in a medium frying pan over high heat until very hot but not smoking, about 1 minute. Add the spring onions and cook, stirring, for 30 seconds, then add the garlic, followed immediately by the mushrooms, sprinkling with the sea salt. Continue to cook, stirring, over medium heat for 3-4 minutes, until the mushrooms have browned slightly.
