I always associate this simple but elegant soup with my mother and early summer, because before the days of frozen vegetables, one had to wait for the first garden peas to appear at the greengrocer’s. My mother made it exactly as her grandmother had made it in Lithuania.
Melt the butter in a saucepan over medium heat then add the onion, cover the pan and cook, stirring occasionally, until soft and golden, about 10 minutes. Add the potatoes and mixed vegetables.
