This melon starter—of Viennese origin —has an unexpected, gently flavoured spicy dressing which is wonderfully refreshing. It looks particularly enticing if you use melons with different-coloured flesh, such as honeydew and cantaloupe.
Early in the day (or the day before), scoop out the melons into balls, set in a sieve over a basin and leave to drip for 1 hour, then cover and chill. (This is essential to prevent juice leaching out of the melons, diluting the dressing.)
