These traditional delicacies have been westernised in recent years and can now be made with easier-to-handle puff pastry instead of filo. They’re irresistible. If you can, use a plastic wonton shaper, available from Chinese stores.
Cut the cheese into pieces that will fit the feed tube of the food processor, then freeze for 1 hour so they won’t ‘gum up the works’. Grate the frozen cheese using the fine grater disc, then turn into a bowl.
