This is a delicious combination of flavours, derived from the traditional Sephardi eggah, or baked omelette. The texture, however, is more akin to a quiche than an omelette, firm yet creamy. You can vary this dish by using 75 g (3 oz) of fried sliced mushrooms or a can of asparagus tips in place of the tuna.
