These tender pancakes, crisp on the outside and fluffy in the centre, make a light alternative to potato latkes that are traditional fare at Hanukkah. They were invented by the Israelis in the early years of the State when meat was at a premium—they called them ‘cheese steaks’. Our family love them so much, we eat them as a light lunch at any time of the year.
