This is the favourite Anglo-Jewish technique for cooking gefilte fish mix.

If you are chopping the fish in the food processor, be very careful not to overprocess it to the purée stage, as this makes the mixture too ‘pasty’.

Ingredients

For the fish mix

  • 1 medium onion, peeled and roughly chopped
  • 2 large eggs
  • 2 teaspoons s

Method

Put the onion into the food processor, together with the eggs, seasonings, sugar and oil, then process until reduced to a purée. (If you wish to make a larger quantity but are using a standard-size processor you will need to do this in two batches.) Pour this purée into a large bowl and stir in the matzah meal. Leave to swell for 10 minutes.
