The fresh, fragrant herbs that grow on French hillsides give this earthy rosemary- and thyme-scented casserole its glorious flavour. In days gone by, a sauce of mushrooms, shallots and wine was served with game, the fruits of the hunter, or chasseur. The sauce is richest and most intense if made the day before and reheated. If you plan to do this, be careful not to overcook the chicken when reheating.
