The beef is braised in an herbed tomato sauce that tastes so good you won’t believe it’s virtually fat-free! You won’t be sealing in the flavour as you do when browning the meat first, so you must add it to a sauce that’s already bubbling to seal the beef by the heat alone. As flavour is the name of the game here, have a good smell of your dried herbs and be ruthless about throwing out any that have lost their fragrance or smell like dried grass!
