Meltingly tender cubes of beef in a sweet sauce, fragrant with Middle Eastern spices, make this an exotic centrepiece to a Rosh Hashana feast. Apples glazed with honey add the finishing touch. The casserole can be cooked and served in an enamelled cast-iron pot or large casserole, but is most traditional in a Moroccan terracotta lidded pot or tagine, available from speciality cookware suppliers.
