This is a low-cal cousin of its rich and famous French relative, ratatouille. Slices of zucchini are simmered in an intensely flavoured sauce with absolutely no fat and the entire dish is cooked is a single pot, making it easy as well as healthy. The dish takes advantage of the very low calorie content of zucchini, while adding the kick of tomato and herbs.
