In the old days kugel was served as a meatless main dish; nowadays it makes an excellent accompaniment to chicken or meat. Alternatively, it could be the star of a vegetarian main course for six. For the smaller family, halve all the ingredients but bake just as long in a smaller dish.
Select an oven-to-table dish measuring approximately 25 × 20 × 5 cm (10 × 8 × 2 in) deep, or use an oval gratin dish 28-30 cm (11-12 in) long.
Grate all the vegetables on the finest blade of the food processor (or by hand)
