An ancient South American grain, quinoa (pronounced ‘kin-wa’) has a nutty taste and slightly chewy texture. The tiny spherical grains, rich in protein and minerals, make a delicious alternative to rice. This pilaf works equally well served hot as a side dish or cold as a salad.
