A mouthwatering variation of the classic French apple pastry invented by the Sisters Tatin in the Loire Valley. This version uses ready-made puff pastry for the base, making the dish much simpler to prepare without compromising the finished result—tender golden pears bathed in rich caramel on a crisp pastry disk. Kitchen tongs are useful to turn over the pears as they caramelise.
