This luscious lemony pudding has stood the test of four generations of good Jewish cooks. With its superb balance of sweet and tart, creamy and spongy, it can still surprise and charm. Call it a food tradition in the making, but since I developed a non-dairy version using 225 ml (8 fl oz) of coconut milk and 125 ml (4 fl oz) of water in place of the milk, it’s become too useful to miss out.
