Fresh peaches are macerated in a light syrup perfumed with sweet muscatel wine and orange-flower water. Bananas and pistachios provide a delightful contrast in texture. If ripe peaches are not available, substitute 675 g (1½ lb) ripe strawberries. An orange liqueur cream gives a delicious contrast, but the peaches are also wonderful on their own.
