This is a most unusual cake, light as a feather yet with a lovely moistness. The spicing is delicate—add a little more if you prefer a more intense flavour. A key ingredient is golden syrup, which imparts a wonderful flavour and texture. At Rosh Hashanah, however, honey is more traditional, so take your pick! The cake can be eaten fresh, but the flavour is best when allowed to mature for a couple of days wrapped in aluminium foil or in an airtight bag.
