Rhubarb is very much a spring pleasure. This works really well with brioche and can be used as a filling for the centre of cakes. It is also delicious in a raspberry cake with vanilla frosting. If you want to have lovely red-coloured rhubarb then pop a wee splash of red food colouring into the pan.
