I love this as an alternative to heavy maple syrup: it works great on pancakes and French toast and you can add it to sparkling water as a refreshing summer drink. It is also awesome drizzled over fresh fruit and berries.

  • The syrup will keep in a sealed jar in the fridge for a week.

Method

Place the water, sugar, lime juice and three quarters of the mint into a small pan. Cut the vanilla pod in half lengthways and scrape out all the pulp with a small knife. Put the pulp and the scraped-out pod into the pan. Put onto a high heat and bring to the boil, then reduce to a simmer until the liquid is just starting to thicken – this will take five to ten minutes. Be careful not to let th
