Kumara? What the heck is that? It’s sweet potato and it’s a staple ingredient that us Kiwis put in everything! This soup is a stunning naturally creamy soup with the ginger and orange cutting through any richness. Delicious.
Heat a heavy-bottomed soup pan over a medium-high heat and sauté the onions, garlic, ginger, orange zest and parsley until the onions are clear and glossy but have not taken on any colour. Add the sweet potato and orange flesh and stir it through, then pour in the stock.
