Adam is a chef from the Borders who was with us in the early days and he was our karaoke clean-down king. Whenever he was working, there was an amazing buzz of lovely food and crazy French tunes bouncing around the kitchen. These fish cakes were Adam’s signature dish at the café, and they’re incredible.
