Nothing beats this with a plate of meats and cheeses; this is the cherry on the top for all antipastos or simply drizzled over your favourite meat.

  • Spiced Apricot Sauce is just as good: just replace the plums with fresh apricots and swap the sultanas for dried apricots. I would also use 500ml white wine vinegar instead of red and white.
  • If you don’t have a muslin cloth, wrap the spices in a brand new J cloth instead. You need to be able to remove them
