These marinated hunks of paneer are a very common protein-on-stick hit. Here I use peppers to add sweet, moist buffers between the cheese and I have used powerful spices and the acids of the garlic and ginger to penetrate the reluctant paneer. Sometimes a splash of apple juice helps soften in a most delightful way. This paneer is delicious wrapped in a roti, with a little slaw on the side.
