OK, so this is my favourite cocktail. The Keralan Southside is a good test of restraint and delicacy in the hands of the mixologist. We use kaffir lime leaves in this along with fresh mint. It is so herbal and elegant. Use fresh lime leaves for the best effect.

Ingredients

  • 4 kaffir lime leaves
  • 10 fresh mint leaves
  • ice cubes
  • 50 ml

Method

  1. In a cocktail shaker add the kaffir lime leaves, mint leaves and a couple of ice cubes and shake vigorously for 6 seconds – this helps the leaves to release their flavour.
  2. Next add the gin, lemon juice and gomme and shake for a further 6 seconds, then strain into a chilled glass.
