I love turning a bowl of minced/ground meat into flavoured meatballs or “koftas”, as you can really tailor them to what you fancy (and have to hand). I always add a few spices, but you can also add fresh or dried herbs to the mix for a different bomb of flavour every time.


  • 100 ml/ fl oz/½ cup vegetable oil


  1. Heat the oil in a large pan over a medium heat. Add the mustard seeds and fry until they start to crackle and pop, then add the onions and cook, stirring continuously, for 6 minutes, until soft and translucent. Add the garlic, ginger, curry leaves and chopped chillies to the pan and cook, stirring, for another 2 minutes, until the onions have started to turn golden brown
