This is the simplest and most comforting of dishes, and we have it at least twice a week at home. Children and adults alike will love it, and once you’ve mastered it, you’ll never feel the urge to reach for a jar of pre-made pasta sauce again.


  • 300 g/10½ oz dried spaghetti
  • 2 tbsp olive oil</


  1. Bring a large pan of salted water to the boil over a high heat. Add the spaghetti and cook for 6–8 minutes, according to packet instructions, until al dente
  2. Meanwhile, heat the oil in a large pan over a medium heat, then add the garlic purée and cook, stirring, for 1 minute, until fragrant but not coloured. Add the chopped tomatoes to the pan, then rinse
