When Aunty Geeta would come and visit, we would frisk her at the door for two things: the first was her prawn/shrimp curry and the other was this fantastic string pudding. It’s basically a really homely rice pudding, but uses very fine vermicelli instead of the rice, making it stringy and fun and delicious.

Ingredients

  • 2 tbsp ghee
  • 120 g/ oz fine vermicelli noodles

Method

  1. Melt the ghee in a large pan over a medium heat. Once the ghee has melted, add the dried vermicelli noodles to the pan and fry for around 2 minutes, until golden brown and well coated in the ghee.
