In India, mango lassi can be found for sale on almost every street corner. In the heat of the day, it is the ultimate way to quench, refresh and rebalance. It’s just as popular in my kitchen on the Wirral, though the weather is a lot more forgiving.


  • 425 g/15 oz canned Alphonso mango pulp or tinned mango slices
  • 150 ml/


  1. Put the mango slices into the bowl of a food processor and process to a smooth pulp. Add the yoghurt, milk, lime juice and mint, then blend again until smooth. Divide the lassi between 4 glasses and serve immediately.
