My ancestors come from Calcutta and my memories of days spent there in my youth are coloured with the glaring heat and intensity of the brutal summer sun. During these summers, cool relief could be found at the heaving stalls of street vendors who sold ice-cold, sweet coffee. I hope this recipe offers you the same relief.

Ingredients

  • 2 tbsp dark-roast instant coffee
  • 400 ml/14 fl oz/scant

Method

  1. Put the coffee in a cup with just enough boiling water to dissolve it, then pour into a blender along with the milk, sugar and both types cardamom seeds. Blend the mixture to combine, then set aside for 10 minutes to allow the spices to infuse.
