The food at El Loco isn’t Mexican. Or at least, it isn’t authentic. It’s more of a blend of textures and flavours that make sense to me. El Loco takes the ideals of Mexican cuisine – freshness, spice, rich flavours, contrast – and mixes them with complementary flavour profiles in Asian food. I’d like to think the result is the kind of food you want to inhale with one hand, while holding a margarita in the other.
