Wash thoroughly under running water to remove excess blood. Trim and discard any ducts or sinew and cut into 2 cm (¾ inch) pieces. Marinate in the same mixture as for the chicken hearts and pan-fry over a high heat. I like mine still pink in the middle, which takes about 3 minutes.
