Braise in Chinese masterstock (Essentials) for 4–5 hours until soft. Remove and cool slightly before peeling off the tough outer layer. Refrigerate until firm then dice into 1 cm (½ inch) pieces. Cook on a plancha or hot frying pan until crispy and caramelised.
