Testicles of Beef/Lamb/Pork


Remove each testicle from its sack and separate the outer membrane using a knife (much like you remove the skin of a fish fillet). Cut into 1 cm (½ inch) cubes and leave to marinate in the fridge in a mixture of raw sugar, fish sauce and grated ginger for at least 2 hours. Cook in a hot frying pan or plancha until well done.
