White Soy Dressing

  • tablespoons rice wine vinegar
  • 100 g ( oz) caster (superfine) sugar
  • 100 ml ( fl oz) light soy sauce
  • 500 ml (17 fl oz/2 cups) water
  • 100 ml ( fl oz) kombu extract
  • 700 ml (24 fl oz) white soy sauce


Whisk all the ingredients together in a bowl until the sugar has dissolved. This dressing will keep in the fridge for up to 1 month. If you can’t find kombu extract, it’s fine to omit it.
