Jellyfish usually comes dried and salted at Asian grocery stores. It gives fantastic texture to a dish and soaks up the flavours around it, making it a handy vehicle.

Ingredients

  • 250 g (9 oz) salted jellyfish
  • tablespoons sugar

Method

Wash all the salt off the jellyfish and soak the pieces in a large container of cold water. Change the water every 6 hours or so and do this for a total of 48 hours.

If the jellyfish came whole, slice it into strips. Put it in a bowl and add the remaining ingredients. Mix well then leave to marinate for 3 hours. Freeze until needed.
