Our family prefers our enchiladas stacked, but if you are cooking for a large group, oven-style might be the way to go.

Preheat oven to 350 degrees F. Spread 1 cup of the sauce in an ungreased 9-by-13-inch baking dish.

Fry tortillas in hot oil just until softened. Drain on paper towels. Fill with cooked pork, cheese, and onion. Roll tortillas and place seam side down in baking dish side by side in a single layer.

Pour 2 cups of the sauce over enchiladas. Sprinkle with more crumbled cheese. Bake until warm, about 15 to 20 minutes. Garnish with dollops of crema or sour cream and serve with your favorite side dish.
