If you love Mexican chocolate, you will love this light, creamy mousse, which has hints of chipotle, cinnamon, and vanilla. This mousse tastes beyond fancy but is quite easy to make.
In a bowl, using an electric mixer, beat the cream on medium-high speed until soft peaks form. Cover and refrigerate until needed.
In the top pan of a double boiler, combine the chocolate, butter, and espresso. Place over (not touching) hot, steamy (not simmering) water in the lower pan and heat, stirring frequently, until smooth. Remove the chocolate mixture from the heat and let cool
